Set to 200°C top and bottom heat or 180°C fan-assisted.
Halve the tomatoes, finely chop or slice the garlic, and cut the onion into thin rings (optional). Place the feta in two small baking dishes or on a baking sheet lined with parchment paper.
Arrange the tomatoes around the feta. Add garlic, onion rings, and seasoning blends of your choice (such as oregano, thyme, pepper) on top. Drizzle generously with olive oil and sprinkle chili flakes to taste.
Bake in the preheated oven for 20–25 minutes, until the feta is lightly golden and the tomatoes are soft and juicy.
Sprinkle with fresh herbs (e.g., basil or parsley). Season with a little salt to taste, if needed.
Serve hot right away with warm bread – or toss with fresh pasta, or use as a topping for bowls or salads.
For extra roasted flavor, switch on the grill function during the last 2–3 minutes and briefly brown the feta.
