Chicken Drumsticks

Chicken Drumsticks from the Grill, Oven, or Air Fryer – crispy & juicy with Rock’n’Rubs “Chicken Wonder” (85 °C)

Ingredients for 4 servings:

  • 8 chicken drumsticks
  • a little oil, as desired
  • BBQ sauce, honey or maple syrup
  • 30–40 g "Chicken Wonder" by Rock'n'Rubs

Preparation

Step-by-step instructions

    Marinate

    Pat chicken drumsticks dry. In a bowl or ziplock bag, toss thoroughly with a little oil and "Chicken Wonder". Let marinate in the refrigerator for several hours, or overnight if possible.

    Preheat & Setup

    - Grill: Set up for indirect heat at about 180°C.
    - Oven: 180°C top and bottom heat (rack above drip tray).
    - Air fryer: Preheat to 180°C.

    Cook

    Place the drumsticks skin side up.

    - Grill (indirect heat): about 30–40 min at 180°C.
    - Oven: about 35–45 min on the rack.
    - Air fryer: 20–25 min in a single layer, turning halfway through.

    Goal: Internal temperature of about 85°C (measured at the thickest part, without touching the bone).

  4. 4

    Glaze (Finish)

    During the last 5–10 minutes, brush with BBQ sauce, maple syrup, or honey and let it caramelize.
    For extra crunch: briefly sear directly on the grill or switch on the oven’s broiler for 1–2 minutes.

    Rest & Serve

    Let the drumsticks rest for 3–5 minutes. If desired, add a light sprinkle of "Chicken Wonder" seasoning and serve with sides like coleslaw, baked potatoes, or salad.

Notes:

  1. - Do not use raw marinated sauce for glazing (unless you bring it to a boil for 2–3 minutes beforehand).
    - For poultry, ensure a safe internal temperature of at least 74–75°C; drumsticks are especially juicy and come off the bone easily at around 85°C.
