Chili Cheese Beef Rib Nachos

Preparation

Super tender, smoked beef spare ribs with BBQ sauce, cut into bite-sized cubes and served with chili cheese sauce, jalapeños, and tortilla chips. This is party soul food at its finest!

Preparation:

Remove the silver skin from the beef ribs and season both sides with “Sweet Rub of mine”.

Let marinate for at least 30 minutes, or even better, for several hours.

Smoke on the grill or in a smoker at around 120°C (indirect heat) for about 5–7 hours, depending on size, until the ribs are wonderfully tender. Occasionally spritz with a bit of apple juice from a spray bottle. Glaze with BBQ sauce towards the end of the cooking time.

Slice the finished ribs off the bone and cut into small cubes. Brush the cubes with a little more BBQ sauce.

On a large serving platter, pour out a bag of tortilla chips in the center, decorate the edge with some arugula and the rib bones. Pile the rib cubes onto the tortilla chips and drizzle with Thunder Chili Cheese Sauce. Top with chilis and, if you like, some chopped cilantro, onion, and other toppings, then briefly warm everything on the grill.

A cold beer is the perfect match for serving. Enjoy!
