Grilled Pork Neck Steaks “Magic Dust”

Grilled Steaks in Magic Dust Marinade – juicy & flavorful at 180–220 °C

Ingredients for 4 servings:

  • 4 pork neck steaks (about 180–250 g each, depending on appetite)
  • 3–4 tsp “It’s a kind of Magic Dust” by Rock’n’Rubs
  • 2–3 tbsp oil (e.g., canola or sunflower oil)

Preparation

Step-by-step instructions

    Mix the marinade

    Mix Magic Dust with a little oil until you have a spreadable paste.

    Marinate meat

    Quickly rinse the steaks and pat dry. Rub evenly all over with the marinade. Cover and let marinate in the refrigerator for at least 2 hours, preferably overnight.

    Prepare the grill

    Preheat the grill to direct, medium-high heat (about 180–220 °C). Make sure the grate is clean and lightly oiled.

    Grilling steaks (direct method)

    Place the steaks on the hot grill and cook for about 4–6 minutes per side (depending on thickness), turning only once, until a nice crust forms.

    Let it rest to soak up the juices (optional)

    For extra juiciness, place in the indirect heat zone and let rest for 1–2 minutes.

    Serve

    Remove from the grill, let rest for 1–2 minutes, and serve immediately.

Tip (Core Temperature Guidelines):

  1. Rare 48–50 °C · Medium-rare 52–54 °C · Medium 56–58 °C · Well done ≥65 °C.
