Red Onion Jam

Red Onion Marmalade with Whisky & Maple Syrup – the perfect burger & BBQ topping

Ingredients

  • 1 kg red onions, thinly sliced into rings
  • 60 ml olive oil
  • 2–3 tbsp Rock'n'Rubs "Whisky in the Jar"
  • 200 grams brown sugar
  • 200 ml balsamic vinegar
  • 50 ml whisky, to taste
  • 50 ml maple syrup

Step-by-step instructions

    Preparation

    Rinse or sterilize jars with hot water. Slice the red onions into thin rings.

    Sauté

    Heat olive oil in a pot and sauté the onions until translucent (not browned).

  3. 3

    Deglaze & reduce

    Deglaze with vinegar and simmer over medium heat for 30–40 minutes, stirring occasionally, until reduced.

    Add flavor

    Stir in "Whisky in the Jar", sugar, whisky, and maple syrup.

    Canning

    Continue simmering until the jam is thick and syrupy and the onions are soft and glossy.

    Season to taste

    Finish with a touch of "Whisky in the Jar" BBQ rub to taste.

    Fill

    Pour hot into clean jars and seal immediately. Let the jars cool.

    Storage & Serving

    Store in a cool, dark place. Once opened, keep refrigerated.
    Tastes fantastic with burgers, wraps, sandwiches, cheese boards, and grilled meats.
