Rinse or sterilize jars with hot water. Slice the red onions into thin rings.
Heat olive oil in a pot and sauté the onions until translucent (not browned).
Deglaze with vinegar and simmer over medium heat for 30–40 minutes, stirring occasionally, until reduced.
Stir in "Whisky in the Jar", sugar, whisky, and maple syrup.
Continue simmering until the jam is thick and syrupy and the onions are soft and glossy.
Finish with a touch of "Whisky in the Jar" BBQ rub to taste.
Pour hot into clean jars and seal immediately. Let the jars cool.
Store in a cool, dark place. Once opened, keep refrigerated.
