															Slice the green tomatoes into thin rounds or wedges. Sprinkle with a little sugar and let sit for 5–10 minutes (this reduces acidity and intensifies the flavor).
Slice the red onion into paper-thin rings. Finely chop the chili, removing the seeds for less heat if desired.
Stir lime juice together with olive oil.
Gently mix the tomatoes, onion rings, and chili in a bowl. Add the lime oil dressing.
Season to taste with "The Winner Steaks it All – Chili Style" (adjusting for your preferred level of heat) and fresh herbs such as cilantro or parsley.
Arrange on a flat plate and finish with a sprinkle of "The Winner Steaks it All" (without chili) just before serving. Enjoy immediately.
