Thunder Chili Cheese Sauce

Thunder Chili Cheese Sauce – creamy & spicy in 10 minutes | with Rock’n’Rubs “Thunder Rub”

Ingredients:

  • 2 tbsp flour
  • 2 tbsp butter
  • 250 ml whole milk
  • 1–2 tbsp "Thunder Rub" by Rock'n'Rubs
  • 60 g double cream cheese
  • 250 g cheddar cheese, grated
  • 1 jalapeño chili, seeded and chopped

Preparation

Step-by-step instructions

    Cook the roux

    Melt butter in a medium saucepan. Stir in the flour and cook over medium heat for 1–2 minutes, stirring constantly, until it smells slightly nutty and turns a light golden color.

    Incorporate the milk

    Slowly pour in the milk while stirring constantly until there are no more lumps. Continue heating until just before it comes to a boil (do not let it boil vigorously).

    Add the seasoning blends and cheese

    Stir in Thunder Rub, cream cheese, grated cheddar, and finely chopped jalapeño. Let melt while stirring until the sauce is smooth & creamy.

    Adjust consistency

    Too thick? Add milk a little at a time. Too thin? Stir in a bit more cheddar. Taste and adjust seasoning (salt is usually barely needed).

    Keep warm

    Keep warm over very low heat or in a water bath, stirring occasionally – this keeps the sauce silky.

    Serve

    Serve immediately with burgers, nachos, chili cheese fries, pulled pork, ribs, enchiladas, Sloppy Joe, or as a dip.

    Storage & Reheating

    The sauce will thicken as it cools – to serve, gently reheat over low heat while stirring (ideally in a water bath).
    Keeps for 2–3 days in the fridge in an airtight container; can be frozen in portions (reheat gently in a water bath).

Tips & Variations

  1. - Cheese mix: for example, ½ Cheddar + ½ Provolone, or add a smoked cheese for a BBQ twist.
    - For extra stretchy cheese, add some mozzarella.
    - Let cool until firm, then cut into cubes or strips and use as a filling (e.g., for chicken breast) – or bread & fry for homemade chili cheese nuggets.
