Cut the tuna into small, even cubes (about 5 mm) using a very sharp knife. Keep chilled.
Peel and pit the avocado, then cut it into small cubes. Immediately toss with a little lime juice and some "Winner steaks it all – Lemon style" to prevent oxidation.
Place the tuna cubes in a bowl. Gently mix with soy sauce, sesame oil, finely sliced spring onion (white part only), Winner steak it all – Lemon Style, and sesame seeds. If desired, adjust the flavor with a bit of lime juice and more seasoning blend.
On a plate, arrange the avocado cubes in a circle (ideally using a ring mold), then top with the tuna tartare. Garnish with green onion, sesame seeds, and a bit of cilantro.
