In a baking dish or grill pan, heat the oil (about 80\u2013100\u00b0C) and gently warm the garlic, shallot, olive herb, and tomatoes in it. Place the meat in the warm seasoned oil, coat on both sides, then cook with the lid closed over gentle indirect heat, turning several times, until it reaches a core temperature of 55\u201360\u00b0C. Let it rest briefly, then slice against the grain.
