Halve the jalape\u00f1os and remove the seeds and white membranes. Mix together cheddar, cream cheese, BBQ sauce, and a little Thunder BBQ Rub, then generously fill the jalape\u00f1o halves with this mixture. Wrap each jalape\u00f1o half tightly with bacon, making sure to pull the bacon snug so the cheese won\u2019t leak out as it melts. If needed, secure the bacon with a toothpick. For extra flavor, sprinkle a bit more BBQ Rub on the outside. Cook the wrapped jalape\u00f1os on a preheated grill or smoker, preferably with some wood chips for smoke, at 120\u2013180\u00b0C using indirect heat until the bacon is crispy and the cheese is melted. Brush with BBQ sauce near the end of the cooking time for a glossy finish.<\/p>\n
