Thread the rolls onto finger food skewers and wrap each one diagonally with half a slice of bacon. This way, the bacon and the meat both soak up those delicious roasted and smoky flavors.<\/p>\n<p>Preheat your grill to about 150\u2013180\u00b0C for indirect heat. Place the PigSticks on the grate, add some smoking wood to the coals, and close the grill lid.<\/p>\n<p>Grill for about 20\u201330 minutes, until the internal temperature reaches around 70\u00b0C and the cheese starts to melt out slightly.<\/p>\n<p>Meanwhile, mix the BBQ sauce with maple syrup and whiskey. For the sriracha mayo, combine the mayonnaise with lime juice and sriracha sauce, then pour into a squeeze bottle.<\/p>\n<p>Brush the PigSticks with BBQ sauce and let them caramelize for a few minutes.
