{"id":4584,"date":"2025-06-12T08:21:27","date_gmt":"2025-06-12T06:21:27","guid":{"rendered":"https:\/\/rocknrubs.de\/rezept\/classic-fried-potatoes-with-bacon\/"},"modified":"2025-12-04T15:01:09","modified_gmt":"2025-12-04T14:01:09","slug":"classic-fried-potatoes-with-bacon","status":"publish","type":"rezept","link":"https:\/\/rocknrubs.de\/en\/recipe\/classic-fried-potatoes-with-bacon\/","title":{"rendered":"Classic Fried Potatoes with Bacon"},"content":{"rendered":"<ol>\n<li><strong>Pre-cook the potatoes (ideally the day before)<\/strong><\/li>\n<\/ol>\n<ul>\n<li>Boil the potatoes with the skin on in salted water for about 20 minutes, until cooked through but still firm.<\/li>\n<li>Drain, let cool, and peel.<\/li>\n<li>Store in the refrigerator overnight \u2013 this makes them easier to slice &amp; fry.<\/li>\n<li>Slice into rounds about 0.5\u20131 cm thick.<\/li>\n<\/ul>\n<ol start=\"2\">\n<li><strong>Prepare the bacon<\/strong><\/li>\n<\/ol>\n<ul>\n<li>Cut the bacon into large cubes or thick strips.<\/li>\n<li>Render in a large skillet (preferably cast iron or stainless steel) without any added fat until crispy.<\/li>\n<li>Remove the bacon and drain on paper towels. Leave the fat in the pan.<\/li>\n<\/ul>\n<ol start=\"3\">\n<li><strong>Saut\u00e9 the onions<\/strong><\/li>\n<\/ol>\n<ul>\n<li>Slice the onion into half rings or dice.<\/li>\n<li>Saut\u00e9 in the bacon fat until golden brown. Then remove briefly and set aside.<\/li>\n<\/ul>\n<ol start=\"4\">\n<li><strong>Fry the potatoes<\/strong><\/li>\n<\/ol>\n<ul>\n<li>If needed, add a little clarified butter or oil to the pan.<\/li>\n<li>Fry the potato slices over medium to high heat \u2013 don\u2019t turn them too often!
