Gently flatten them with a glass or potato masher (not too thin, about 1\u20132 cm thick).<\/li>\n<li>Season:<br \/>\nMix olive oil with garlic and Classic Diner fries seasoning. Generously brush the smashed potatoes with the mixture.<\/li>\n<li>Bake:<br \/>\nBake in the oven for about 25\u201330 minutes until golden brown and crispy. Check once halfway through.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><strong>Fire Plate:<\/strong><\/p>\n<ol>\n<li>Pre-cook the potatoes:<br \/>\nBoil the potatoes with their skins on in salted water for about 20 minutes until tender. Drain and let them steam off briefly.<\/li>\n<li>Prepare the fire plate:<br \/>\nLight the fire and preheat the plate thoroughly. The hot zone should be sizzling (water droplets should evaporate instantly).<\/li>\n<li>Prepare the potatoes:<br \/>\nPlace them on a cutting board and flatten with a glass or spatula (about 1\u20132\u202fcm thick).<\/li>\n<li>Grill:<br \/>\nDrizzle a little oil onto the fire plate. Place the potatoes flat side down. Drizzle with a bit more oil and sprinkle with Classic Diner fries seasoning.<br \/>\nGrill for about 5\u20138 minutes per side until golden brown and crispy.
