Chili Cheese Nachos

Chili Cheese Nachos with “Chili Cheese” fries seasoning from Rock’n’Rubs.

Ingredients for 6–8 servings:

  • 300–350 g tortilla chips
  • 400 g ground beef
  • 1 small onion, 1 red bell pepper
  • 1–1.5 tsp Chili Cheese
  • 1 tbsp tomato paste
  • 50 ml water or stock
  • 200 g cheddar cheese
  • 150 ml milk
  • 50 ml cream
  • 1 tsp cornstarch
  • Spring onions, cilantro, optional jalapeños

Preparation

    Ground Meat Mix

    Brown the ground meat, then briefly sauté the onion and bell pepper with it. Stir in the tomato paste, season, add a little liquid, and let it reduce briefly. The mixture should not be too runny.

    Cheese Sauce

    Heat the milk and cream, then stir in the cornstarch. Melt the cheddar, season with ½ tsp "Chili Cheese". The sauce should be creamy and thick.

    Layer

    Chips, ground meat mixture, cheese sauce, another layer of chips, remaining sauce.

    Baking

    Bake at 190°C (top and bottom heat) for 5–8 minutes until golden.

    Top with spring onions, coriander, and jalapeños if desired, and serve immediately.
