Chili Cheese Nachos
Chili Cheese Nachos with “Chili Cheese” fries seasoning from Rock’n’Rubs.
Ingredients for 6–8 servings:
- 300–350 g tortilla chips
- 400 g ground beef
- 1 small onion, 1 red bell pepper

1–1.5 tsp Chili Cheese - 1 tbsp tomato paste
- 50 ml water or stock
- 200 g cheddar cheese
- 150 ml milk
- 50 ml cream
- 1 tsp cornstarch
- Spring onions, cilantro, optional jalapeños
Preparation

Ground Meat Mix
Sear the ground meat over high heat. Add the onion and bell pepper, and sauté for 2–3 minutes. Briefly roast the tomato paste. Season with Rock'n'Rubs fries seasoning "Chili Cheese." Add a little liquid and let it reduce briefly.
Important: Don’t make it too saucy – otherwise the chips will get soggy.

Cheese Sauce
Heat the milk and cream, then stir in the cornstarch. Melt the cheddar, season with ½ tsp "Chili Cheese". The sauce should be creamy and thick.

Layer
Chips, ground meat mixture, cheese sauce, another layer of chips, remaining sauce.

Baking
Bake at 190°C (top and bottom heat) for 5–8 minutes until golden.

Top with spring onions, coriander, and jalapeños if desired, and serve immediately.
