Frauke’s After-Work Sandwiches

These rolls are made for just that: moist thanks to cream cheese, hearty with sunflower seeds, pumpkin seeds, and flaxseeds, and finished with that special kick from “GEILER SCHEIZZZ – Die Zitrus Bitch.” Recipe by @frauke_backen_mit_liebe

Ingredients (for 10–12 rolls):

  • 450 g spelt flour (type 630)
  • 50 g whole spelt flour
  • 250 g cream cheese (plain)
  • 300 ml lukewarm water
  • 10 g fresh yeast
  • 1 tbsp honey or date syrup
  • 10 g GEILER SCHEIZZZ – The Citrus Bitch
  • 2 tbsp olive oil or canola oil
  • 40 g sunflower seeds
  • 30 g pumpkin seeds
  • 20 g flaxseeds

Preparation

    Activate the yeast

    Dissolve the yeast and honey in lukewarm water.

    Mix the dough

    Mix the flours, “Zitrus Bitch,” and seeds. Add the yeast water, cream cheese, and oil, then knead everything into a soft, slightly sticky dough.

    Dough resting time

    Cover and let rise for 45–60 minutes until the dough has visibly increased in volume.

    Shape

    Place the dough on a floured surface, divide into 10–12 pieces, and shape loosely.

    Final proofing

    Let rest for another 20 minutes.

    Baking

    Bake at 220°C top and bottom heat for 18–22 minutes until golden brown. For the first few minutes, feel free to add a little steam.

    Result

    Crispy on the outside. Juicy and soft on the inside. A hearty bite. And that fresh citrus kick at the finish. Rolls that make even the longest day feel alright.
