Rockwurst Nachos with Red Onion Marmalade, BBQ Sauce & Chili Mayo – quick finger food from the grill

Ingredients for 5 servings

  • 1 pack (= 5 pieces) Rockwurst “Whisky in the Jar” by Kalieber
  • 25 large tortilla chips
  • Red Onion Jam
  • BBQ sauce to taste
  • Chili Mayonnaise (Sriracha)
  • Cress or spring onion as a topping

Preparation

Step-by-step instructions

    Cook the sausage

    Grill or smoke the bratwursts, let them rest briefly, then cut each sausage into 5 slices.

    Prepare the base

    Spread the tortilla chips on a serving platter (or in a cast iron skillet) - optionally warm them in a preheated grill or oven for 2–3 minutes.

    Top with

    Place 1 teaspoon of red onion marmalade on each chip, then top with a slice of sausage.

    Toppings

    Drizzle with BBQ sauce and chili mayo, then top with cress or thin onion rings.

    Serve

    Serve immediately as finger food bites – they taste best warm.

Tip

  1. For an extra kick, add some jalapeño or a hint of lemon zest. Top the chips just before serving to keep them crispy.
