Mediterranean Vegetable & Feta Stir-Fry

Mediterranean Vegetable & Feta Stir-Fry with “Sheep’s Cheese” from Rock’n’Rubs. Recipe by @blackbeardbbq

Ingredients

  • Carrots
  • red onions
  • Spring onions
  • Tomatoes (e.g., cherry tomatoes)
  • 1 block feta (approx. 200g)
  • Plenty of Rock'n'Rubs feta cheese
  • Garlic Oil
  • Optional: A splash of balsamic vinegar or fresh bread

Preparation

Step-by-step instructions

  1. 1

    Preparation

Cut the carrots into thin sticks, the red onions into wedges, and the spring onions into rings. Simply halve the tomatoes. Preheat the oven or grill to about 200°C (fan or indirect heat).

  2. 2

    Sauté in garlic oil

Heat the garlic oil in a heatproof skillet (or a grill tray). Sauté the carrots and red onions for about 5–7 minutes, until they take on some color and are just tender.

  3. 3

    Vegetable Finisher

Add the tomatoes and the white part of the spring onions for a moment. Toss everything briefly to evenly coat with the garlic oil.

  4. 4

    Marinate & place the feta

Generously coat the feta on all sides with the "Schafskäse" seasoning blend. Push the vegetables in the pan to the side or make a well in the center, then place the seasoned cheese in the middle.

  5. 5

Bake in the oven or grill

Place the pan in the preheated oven or on the indirect heat zone of the grill for about 10–15 minutes. The feta is ready when it’s soft and the seasoning on top starts to sizzle gently.

  6. 6

    Serve

Sprinkle the remaining green spring onion rings over the stir-fry before serving.

Tip

  1. If you like your feta even creamier, drizzle a little olive oil directly over the seasoned cheese before baking. This will also intensify the flavor of the herbs in the rub.
