Pork Belly Burnt Ends

Pork Belly Burnt Ends with “Hot Honey Crunch” from Rock’n’Rubs.
  • 1.5 kg pork belly, skin removed
  • 5 tbsp “Hot Honey Crunch” from Rock’n’Rubs
  • Ingredients for the BBQ glaze:
  • 60 g butter
  • 1 tbsp honey
  • 80 ml "Classic Smokey BBQ Sauce" from Rock'n'Rubs
  • 1 tbsp brown sugar

Preparation

    Preparation

    Cut the pork belly into 3 cm cubes. Season thoroughly with rub.

    Grill setup

    Set the smoker to 120°C for indirect heat.

    Cooking process

    Place the cubes on a rack. Smoke for 2–3 hours until a nice crust forms.

    Glaze

    Place the pieces in a grilling tray and add:
    • Butter
    • Honey
    • BBQ sauce
    • Brown sugar

    Mix everything together and continue cooking for 1 hour until caramelized.
